Mama Monroe’s Famous Banana Bread

My mother makes the best banana bread. I know you’ve probably heard that before, but seriously. I’ve never eaten any that compares!

I remember visiting local Christmas markets as a child and helping my mother pick the best walnuts. We would take them home, shell them with nutcrackers, and put them into her banana bread. What a wonderful memory.

Makes 1 loaf

Preheat to 350 degrees

1 C sugar

1 8 oz package softened Philadelphia cream cheese

1 C mashed ripe bananas (about 2 medium)

2 eggs

2 C bisquick

1/2 C chopped nuts or chocolate chips (optional)

In mixer bowl, cream together sugar and cream cheese until light and fluffy.

Beat in bananas and eggs.

Add bisquick mix and mix in’s, stirring just until all ingredients are moistened. (Do not over stir)

Put into greased loaf pan.

Bake at 350 degrees for one hour, laying foil over top near the end of it browns too quickly. Check with toothpick.
